Zucchini Noodles Don't Have to be Soggy

A lot of people are discouraged eating zucchini noodles because they get soggy. But did you know that they don't even need to be cooked at all? In fact, this recipe uses raw zucchini noodle and packs all the flavor in the marinade. It can be eaten as a healthy side dish, chilled on its own. Or, take this and mix it in with your favorite hot dish at the very end of cooking. The zucchini will stay crisp and fresh, but will steam with the heat for a cooked flavor.

How To Make Zucchini Noodles

The most important thing about making zucchini noodles is that your zucchini is fresh and firm.

I use this very inexpensive and easy julienne tool for making ALL of my noodles:

Not only is it priced at under $12 (just my type of budget!) but it fits in a drawer and is simple to use and clean. Here's a few tips:

  • Always wash your zucchini before starting, since you will be using the skin for that fantastic color
  • Trim off the tip of the bottom end, where all the bitter oils build, and discard.
  • Use the stem end to hold onto for peeling.
  • Starting at the stem end, gently pull the julienne tool towards the other end (the way you would use a vegetable peeler)
  • Rotate the zucchini as you go so that you get as much of the beautiful outside color as possible until all of the squash is used up.
  • Alternate between yellow and green zucchini for a bright look
  • Add carrot for some extra vitamins, color, and crunch

Tricks for Making this Healthy Sesame Zucchini Noodle Salad

  • This dressing uses a very simple Sichuan Chili Oil that I like to make and keep in my fridge for quick recipes like this. It takes only a few minutes to put together, but the longer it sits, the more the flavor builds. Make a jar of this a few days ahead of time and you will have better results.
  • When you make your zucchini noodles, keep them chilled until just before using so that they stay nice and crisp.
  • Feel free to improvise and add things like crispy tofu and maple fermented mushrooms. Served over perfectly cooked rice, this side dish could easily turn into a full meal.

  • Using a julienne peeler, make your zucchini noodles (see details in the post).

  • Place in a bowl and refrigerate until ready to serve.
  • In a separate bowl, mix the chili oil, soy sauce, vinegar, sugar, and orange juice. Whisk together to combine.
  • When ready to serve, stir the dressing once more and pour over the Zucchini Noodles. Mix in with your hands to combine and cover the zucchini.

  • The noodles will taste bright, slightly sweet, and a little bit spicy. Add a little salt to taste if needed.
