What Are Split Peas?

Split peas are the more mature form of peas. The seeds have been allowed to dry and when they come out of their skins, they naturally split. There are different varieties of peas and the color can be either yellow or green. The yellow will have a nuttier flavor and the green slightly sweet. This recipe can be made with either.

Shopping for Split Peas

  • Look for bright colors (either bright green or golden yellow) in the peas
  • The peas should have a light sheen to them and not look powdery or pale
  • Split peas will keep for several months in an airtight container that is out of the light in a cool, dark place

Making the Soup

  • For the fastest results, make sure to cut all of your vegetables and measure your ingredients first before you start cooking. By doing this you ensure that you can move through the recipe without stopping to measure or scoop.
  • Start with the "Sauté" mode on the Instant Pot. I love this mode because it allows me to brown the vegetables without dirtying another pan.
  • I try to write all of my recipes with the idea that you can use any brand of ingredients that you prefer and/or find locally. HOWEVER, I do absolutely love this specific vegetarian no-chicken soup base. It is one of my go-to pantry ingredients. I often use it in a lighter concentration than their recommendation because I love just the hint of umami flavor it adds, so be sure to use the measurements in my recipe, not on the jar.
  • Can you add more or skip the chipotle? Of course you can- you're the cook! The small amount I have in the recipe will add only a mild heat that will be tolerable by almost everyone (even my kids can eat it). However, if you're a spice lover, add a whole chile and chop it up first to catch all the spice from the seeds and pulp.
  • I love the Wrights brand liquid smoke. This is a NATURAL by-product of a wood burning fire. The smoke and vapors combine and then the condensation from those things is filtered and becomes what we call "liquid smoke". The flavor of smoke and split peas is a classic combination.
  • The best part of the whole process is that after sautéeing the veggies, you simply combine the ingredients, give it a stir, and then set the pot to cooking. I love Instant Pots for their ability to cook quickly (pressure cooker, not slow cooker) and give you the ability to walk away.

  • Turn the Instant Pot on “Sauté” mode for 15 minutes.

  • While the Instant Pot is heating up, peel and dice the onion into ½” pieces. Set aside
  • Cut the carrots and celery into ½” thick pieces. Set aside separately from the onion.
  • Place the oil and the onions in the Instant Pot and stir. They should start sizzling immediately in the hot pot.

  • Cook for approximately 3 minutes, stirring frequently, until the onions start to turn a golden brown.

  • Add the Carrots, Celery, and the half of a chipotle pepper. Stir and continue to cook for an additional minute.

  • Turn off the Instant Pot by pressing “cancel”.
  • Add the split peas.

  • Add the No-Chicken Base.

  • Add the Bay Leaves.

  • Then add the water, salt, and liquid smoke. Stir to combine.

  • Cover and turn the Instant Pot on “Pressure Cook, High” for 40 minutes.

  • Let the pot natural release for another 30 minutes.
  • Before opening the lid, press the release button just to be sure all of the pressure is released.
  • Stir well. The soup is ready to enjoy.
